NINI, captured on location in Akasaka, Tokyo, for the grand opening of 1 Hotel Tokyo. 

Chef Nikko Policarpio leads the hotel’s restaurant with a mindful, sustainability-driven approach. Blending Japanese, North American, and French influences, his dishes highlight seasonality, precision, and a deep respect for every ingredient.

Being onsite and witnessing what a hotel of this scale goes through in the days leading up to opening was wild and incredible. Grateful to have played a small part in its unveiling.
